Enfield Shaker Maple Pie
ENFIELD SHAKER VILLAGE, NEW HAMPSHIRE
1 1/4 cups (10 oz.) maple sugar
1/2 cup butter
1 egg, lightly beaten
1 cup sweet cream
1 unbaked 9″ pie shell
Combine maple sugar and butter, add egg, and last the cream. Fill pie shell and bake like a custard pie, at 400 degrees F. for 10 minutes and then at 375 degrees F. for 20 minutes. Serve at room temperature. SERVES 6-8.
COOKING SUGGESTIONS: Pure maple sugar is available in a variety of sizes on Amazon, if you cannot find it in your local grocery store or coop. By “sweet cream”, Shakers meant what we now call “whipping cream”.
This recipe first appeared in The Best of Shaker Cooking, edited by Amy Bess Miller and Persis Fuller (New York: Macmillan Publishing Co., Inc. 1970), based on Shaker manuscript recipes, 19th century Shaker almanacs, and the Shakers’ own publication, “The Manifesto”. The Best of Shaker Cooking is still in print and available from Amazon or purchased from the Enfield Shaker Museum gift shop.
