Enfield Shaker Maple Pie

1 1/4 cups (10 oz.) maple sugar
1/2 cup butter
1 egg, lightly beaten
1 cup sweet cream
1 unbaked 9″ pie shell

Combine maple sugar and butter, add egg, and last the cream. Fill pie shell and bake like a custard pie, at 400 degrees F. for 10 minutes and then at 375 degrees F. for 20 minutes. Serve at room temperature. SERVES 6-8.

COOKING SUGGESTIONS: Pure maple sugar is available in a variety of sizes on Amazon, if you cannot find it in your local grocery store or coop. By “sweet cream”, Shakers meant what we now call “whipping cream”.
